Braised Red Cabbage with Tofu
Recipe Name | Braised Red Cabbage with Tofu | Origin | | Ingredients | 8 ounces firm tofu 1-inch cubes 1 medium onion medium ½ inch diced 2 cloves garlic 1 small head red cabbage. ½ inch slices 2 apples, cored and 1 inch diced 2 cups vegetable stock 2 T apple cider vinegar 1 tsp caraway seeds 3 T fresh horseradish, shredded 1 sprig thyme 1 cinnamon stick · ½ cup dried Bing cherries | Instructions | · Combine all ingredients in a casserole dish with lid. · Bake at 350 for 1 hour or until cabbage is tender. | Yield | | Notes | This recipe makes a lot, but this dish is great as a leftover. Actually it is at its peak after a couple of days. · No meat - No wheat - No dairy - No sugar - No guilt |
